Prawns Yellow Curry

Ingredients

• 70g Blue Elephant yellow curry paste
• 400ml Blue Elephant coconut cream
• 12-16 pieces of headless prawns (about 350g)
• 2 Tbsp vegetable oil
• 100 ml of stock or water
• 4 spears of asparagus
• 4-5 pieces of cherry tomatoes
• 1 parboiled potato (diced)
• 1/2 white onion (sliced)
• 1 Tbsp Blue Elephant Fish sauce
• 1/2 Tbsp sugar
Optional : coriander leaves for garnishing

Heat 2 Tbsp. of VG oil in a sauce pan and stir-fry the Blue Elephant Yellow curry paste until aroma develops and lower the heat.
Add half of the Blue Elephant coconut cream , stir and bring to a boil.
Add the remaining coconut cream and 100ml of water or broth. Bring to a boil.
Add the prawns and vegetables.
Season to taste with the Blue Elephant Fish Sauce and sugar.

Simmer until cooked through and garnish the dish with coriander leaves before serving. Serve hot with Thai Jasmine rice.

Cooking Steps

Step 1

In a sauce pan or a wok, heat the Blue Elephant Red Curry Sauce with 1/2 cup (125ml) of water.
Bring to boil.

Step 2

Add the sliced chicken breast and optional vegetables if you have.

Step 3

Simmer until protein is cooked to your taste.

Step 4

Garnish with sliced red chili. Serve with Blue Elephant Thai jasmine rice.

Step 5

Season to taste with the Blue Elephant Fish Sauce and sugar.

Step 6

Simmer until cooked through and garnish the dish with coriander leaves before serving. Serve hot with Thai Jasmine rice.

Chef s Tip

For a vegan curry, replace the prawns with tofu or tempeh and use light soya sauce instead of fish sauce for seasoning.

Feel free to modify the recipe by using different local & seasonal vegetables available near you; just make sure to cook first veggies that could release water while boiling in the sauce and risk to dilute it.

    Hello,
    I heard you name since 2 years ago when I visited Bangkok with my sister. She brought me to dine in your restaurant in Bangkok once I in loved with. But unfortunately I couldn’t get Red & Yellow curry paste when I got back to Vancouver Canada.
