Khao Man Kai

Ingredients

For the chicken :
• 1 Whole chicken (1,5kg)
• 1 tsp White pepper powder
• 1 Tbsp Salt
• 1 bottle BE Ginger Sauce
• 2,5 L Water
• 4 Coriander roots
• 2 pces Spring onions
• 1/2 Tbsp Salt
• 20g Garlic (chopped)

For the rice :
• 20g Garlic (cloves)
• 100g Chicken fat/skin (taken from the whole chicken)
• 4 cups BE Jasmine Rice
• 25g Ginger (sliced)
• 2 Tbsp Sugar
• 2 Tbsp BE Light soy sauce
• 50g Butter
• 4 Pandanus leaves
• 1 Cucumber (sliced)
• 1 stalk Spring onions (chopped)

Cooking Steps

Prep:

Wash the chicken thoroughly

Marinate the chicken with white pepper powder and salt

Boiling the whole chicken:

In a pot on medium heat, pour water and keep the water warm. Add the whole chicken, spring onion, coriander root and salt. Cover the pot and boil for about 25-30 minutes

Remove the chicken, and keep 6 cups of the water separately for cooking rice. The rest will be kept for the soup.

Rice :

In a saucepan on medium heat; add chicken fat and wait until the skin is crisp, then add chopped garlic to brown.

Add jasmine rice, the chicken stock you kept aside, garlic, coriand roots, sliced ginger, sugar, light soya sauce, butter and pandanus leaves.

Cover it, and let it cook for 20 minutes with lid on. Make sure there is an opening. Check from time to time. Then turn off the heat, and let it rest for 10 minutes.

Serving :

When the rice is cooked, put it on the serving dish. Slice the chicken and place on the dish.

Add cucumbers and spring onions. Accompanied by the chicken soup and the BE Ginger Sauce.

Chef s Tip

Usually this khao man kai chicken and rice is served with sliced cucumber and a bowl of chicken broth (the one used to boild the chicken) with fresh coriander leaves.
