CHOCOLATE MOUSSE WITH STAR ANISE

INGREDIENTS:
Dark Chocolate 375 gramms.
Butter (unsalted) 125 gramms.
Egg Yolks (8)
Egg Whites (10)
Sugar 120 gramms.
Star Anise (ground) ¾ tsp.
White Chocolate 40 gramms.

METHOD:
1.
Melt the chocolate with butter over a double saucepan.

2. Whip up the egg yolks with 50 gms of sugar and star anise powder till stiff.

3. Whip up the egg whites with the remaining sugar till stiff and gently fold into the mixture. Pour into moulds.

4. Melt the white chocolate and pour on top to add contrast and colour.
