Bonny, amply-proportioned Khun Sunant
Wilairat is unofficial aunt to the young Thais working in
the kitchens of the Blue Elephant in London. They call her
Madam Pa; Pa, rather confusingly, meaning aunt. |
Sunant grew up in the extended Thai royal court and learned to
cook Royal Thai Cuisine at her mother’s knee. However, it
never occurred to her to be a professional cook. Later she
found herself head chef of a large restaurant with nine
assistants, where she got the opportunity to show off her own
twist to traditional curry recipes. Her green curry, with the
addition of fresh coriander leaves won a national prize.
In
1984 Sunant moved to Chao Khun, a 1000-seat traditional
establishment in which the The Blue Elephant had an interest.
This was the stepping stone to a change of continents for Khun
Sunant. She joined the Blue Elephant Group in 1988 and has
since then been imparting her unique touch to the curries of
Paris, Brussels and London. And such is her reputation that
when Her Majesty The Queen of Thailand visits Europe, Sunant
is summoned to prepare curries for her in the royal suites in
the three capitals. However, back in the kitchens of the
London Blue Elephant where she is based, she still remains
known and loved as Madam Pa, unofficial aunt and undisputed
curry queen.
