Khun Bounsavath
Thongsavanh (Vath)

Khun Bounsavath Thongsavahn (appropriately nicknamed Vath) is
another of those exceptional Chefs who is native of Laos. Also born
in Luangphaban, Khun Vath moved to Belgium in 1983 to join his
sister in Liege. After graduating, Khun Vath found himself in the
kitchens of the Blue Elephant in Brussels, where he gained
invaluable first hand knowledge under the founding chefs there.
He has been by far the most mobile member of the Blue Elephant
London Kitchens. From Brussels he was moved to a sister restaurant
in Liege in 1989.
He then went on to Copenhagen as Head Chef in 1990, in order to
supervise and co-ordinate the opening of a new Blue Elephant there.
Once Copenhagen was up and running, Khun Vath was sent to Paris, After a spell of
about for 2 years in the Paris kitchens, he was finally sent
to London in 1995, where he remains till today. Khun Vath is a
very interesting and adaptable chef – he, along with Khun
Srisak are usually the first to be sent to other countries and
venues for festivals and promotions. And of course, should
there be the need for a stand-in chef in any of the Blue
Elephants worldwide, Khun Vath is by far the most popular
choice. |
