Khun Sompong Saejew
Executive chef
Special skill: Chiang Mai Cuisine
Khun Sompong is the latest addition to the London Blue
Elephant’s kitchens, but he is by no means the least. He
joined the restaurant in December 2002 as Executive Chef,
after a spell of about six months assisting in the launching
of the Blue Elephant Cooking school in Bangkok. There he was
inspirational in introducing some new, exciting dishes. |

Khun Sompong has had an immense wealth of experience
from some of Thailand’s most renowned and sought after
restaurants and hotels. As a young man, Khun Sompong graduated
from the prestigious Catering College in Cholburi in Thailand,
before landing his first job as a Cook Helper in The Orchid
Hotel in Chiang Mai. Since then, he has worked his way around
the kitchens of restaurants and hotels in Chiang Mai, Phuket,
Chiang Rai, Myanmar, Nakonpathom, Bangkok, and Laos such as Le
Meridien Baan Boran, The Westin Hotel and The Phuket Yacht
Club.
This invaluable international experience will surely be put to full
use by Khun Sompong in order to maintain and develop the vast
and hectic kitchen of the Blue Elephant, London, which, at
times is called to cater for over 500 covers on a single
night.
Later this year, Blue Elephant London’s annual month
long Festival will feature
"Chiang Mai, Culinary Rose of the North". Sompong, himself
native from Chiang Mai, will assure the authenticity and
genuine touch of this delicious Cuisine. |
